Another of mom`s recipes that she would make when we were kids. My dad loved his pies and often had one for desert. This was one she made with left over crust. She would bake the crust with a fulled baked pie and make a no bake pie a few days later.

1 quart of strawberries 1/2 cup of water 2 tablespoons of corn starch 1 1/2 tablespoons of butter 3/4 cup of sugar (I never use this much, especially if the strawberries are sweet) 1 teaspoon of lemon juice

Split strawberries in half. I always cut them small. This is especially good when strawberries are not real sweet. Mash the one half add water and corn starch. Stir constantly over medium heat until it thickens, turns clear and a slight boil. Remove from heat, add butter, sugar and lemon juice. Mix in other half of strawberries. Add to pie crust.
