Zucchini onion bread

found a recipe on the Internet I was able to alter.
Just wanted a bread that was gluten free but tasted good. Most breads need yeast and yeast works best with Wheat. So I moved to a bread that does not use yeast. Most are sweet. Cornbread is a good one but often uses sugar. I created an awesome bread that works with dinner.

  • 3 cups of flour (use carbonzo, brown rice, oat, tapioca) A combination of these or some of these.
  • 1/2 cup of Parmesan cheese
  • 1 teaspoon of salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 large eggs room temperature
  • 1 cup of buttermilk
  • 1/3 cup of butter melted
  • 1-1/2 shredded zucchini
  • 1/4 cup of grated onion

Combine flour, cheese, salt, baking powder and baking soda. In another bowl whisk the eggs, buttermilk and butter. Mix both together and fold in zucchini and onion. Pour into a greased and floured 9x5 loaf pan. Bake at 350 degrees until a toothpick inserted in the center comes out clean, about an hour. Cool for 10 minutes before removing from pan to wire rack.
